Joe is actually a very good cook, but he doesn't much like to bake. Tonight, though, he offered to bake us some of the "World's Best Chocolate Chip Cookies" (recipe is coming later), which actually ARE delicious. However, not so much if you don't remember to add the flour.

There's something about El Rey
Ahh, El Rey....it means "the king" in Spanish and it is certainly the king of restaurants in Montgomery. A trip to El Rey marks the dawn of spring for us. There is nothing quite like sitting on the porch, enjoying a margarita, and eating chips & salsa during the 2 hours of spring we experience in Alabama. Ok, so maybe it's a little longer than 2 hours -- but not by much.
Or toss it in your salad to give it a kick ....
Salsa
(Serving size: about 3 cups)
About 4 plum or roma tomatoes
1/2 sweet onion (such as vidalia)
1 jalapeno, seeded
1 clove fresh garlic
1/4 cup fresh cilantro
1/4 tsp salt
1 TB red wine vinegar
juice of 3 limes
Combine all ingredients. Refrigerate for 2-3 hours to let flavors combine.
But once May turns to June and June turns into 97 degrees, sitting on the porch becomes slightly less desirable. The craving for their fresh organic salsa, chicken tacos, and burritos does NOT go away. And after several failed attempts, I think I have finally replicated the El Rey salsa.
Prepare for your nose to be assaulted with the smells of fresh cilantro, garlic, tomatoes, and lime. Mmmm.....
And the best thing about this? It's completely versatile. Sure, make some fresh chips out of corn tortillas (bake them if you want to be a little healthier!) but how about grilling some chicken to put it on? Oh, and don't forget the wine...
